SEAFOOD PAELLA

Traditional Paella de Mariscos

Recipe for traditional paella de mariscos (seafood paella) with squids, crabs and shrimps for 6 persons.

Paella ingredients:

  • 1 cup of olive oil ( 1/4 – 1/3 of liter )
  • 3 cloves of garlic
  • 600 grams of rice ( 1 and 1/3 pound)
  • a bit of saffron (1/4 teaspoon)
  • 150 grams (1/3 pound) of squids
  • 1 liter (4 cups) of fish broth
  • 4 sea crabs
  • 8 spoons of natural grated tomato
  • 8 large shrimps
  • 1 teaspoon of Spanish páprika
  • 150 grams (1/3 pound) of cuttlefish (sepia)
  • salt and pepper to taste

Seafood Paella preparation:

First, prepare squids and sepia, cutting into pieces of about 2 – 3 cm (1 inch). Heat the olive oil in a paella pan and fry shrimps and sea crabs for a short time – about 2 minutes. After that, add pieces of squids and sepia and fry together until browned.

In continuation, add grated tomato and minced garlic and fry well. Once it starts getting color add Spanish paprika and mix. Remove and put apart large shrimps and sea crabs. Now, you can pour in rice for paella and continue cooking. Warm up fish broth separately – once boiling add it to paella rice. Mix everything well and cook over medium to high heat.

After 10 minutes, put shrimps and sea crabs at the top of the paella and continue cooking for about 10 minutes more. At the end, the broth should be completely absorbed and evaporated. Remove paella pan from the fire and let it rest for a while on a wet cloth before serving.
