Recipe for traditional Spanish food – Paella Valenciana with chicken and rabbit meat for 6 persons.

Paella Valencia Ingredients:

  • 5 spoons of olive oil
  • 1 1/2 liter of water (6 cups)
  • 50 grams (about 1.5 – 2 oz) of artichokes
  • 450 grams (1 pound) of paella rice
  • a bit of saffron (1/4 teaspoon)
  • 100 - 200 grams (about 3.5 – 7 oz) of rabbit meat
  • 75 grams (about 2.5 oz) of fresh green beans
  • 1/2 teaspoon of Spanish páprika (sweet red pepper)
  • 100-200 grams (about 3.5 – 7 oz) of chicken meat
  • 3 spoons of tomato sauce
  • Salt and pepper to taste

Paella recipe:

First, heat the oil in a paella pan. Once hot, throw in pieces of rabbit and chicken meat and fry on medium heat until browned. After that, add vegetables cut into pieces. Cook altogether during several minutes. In the middle of the paella pan, make space for tomato sauce, previously mixed with the Spanish paprika spice. Pay attention not to burn the sauce while frying it. Now, mix the sauce with meat and vegetables and pour in water, covering everything up to the border of the paella pan. Cook meat with vegetables during half an hour, adding salt and pepper to taste.

At the end, add rice for paella with saffron. Mix well and distribute rice all over the pan. Continue cooking until the liquid has been completely absorbed and evaporated. The paella rice should be cooked well. Before serving, allow the paella to cool for five to ten minutes. This Spanish recipe paella is a well known Mediterranean dish, a typical plate in the Valencian Community and Costa Blanca.
