Paella - Traditional Spanish food – Recipe for Paella Leonesa with pork and chicken for 8 persons.

Spanish Paella Ingredients:

  • 300 grams (10 oz) of olive oil (1 and 1/2 cup)
  • 500 grams (1 pound) of pork
  • 1 kg (2 pounds) of boneless, skinless chicken meat
  • 200 grams (7 oz) of shrimps
  • 350 grams (12 oz) of clams
  • 200 grams (7 oz) of squids
  • 300 grams (10 oz) of conger fish
  • 12 river crabs
  • 200 grams (7 oz) of ham (jamón serrano)
  • 1 onion
  • 2 cloves of garlic
  • 1 laurel leaf
  • 100 grams (3 oz) of tomato, skinned and diced
  • 150 grams (5 oz) or red and green pepper
  • 2 teaspoons of Spanish paprika
  • 600 grams (20 oz) of rice for paella
  • peas, artichokes and asparagus
  • lemon
  • cooked egg
  • salt and pepper to taste

Recipe paella leonesa:

Heat olive oil in a paella pan and fry cleaned shrimps and squids, conger fish cut in pieces, crabs and ham with chopped onion, minced garlic, laurel leaf, diced tomato and green and red pepper. Fry and move with a wooden spoon until get a bit brown.

Fry separately chicken meat. Once tender, put it into a pot and cook in half a liter of water (2 – 3 cups). Cook it for about 15 minutes adding Spanish paprika into the broth.

Now, pour rice into the paella pan together with prepared chicken meat and distribute uniformly. Cover everything with the chicken broth and let it boil (volume of water should be twice as much as volume of paella rice). While cooking, add gradually slices of sweetpepper, asparagus, lemon juice, artichokes and peas. Cooking time is about 20 minutes.

Once paella is ready, take it away from fire and let it rest on a wet cloth for about 5 to 8 minutes before serving. You can also decorate paella with big clusters of lemon (without peeling), strips of red and green pepper and cooked egg.
