Traditional paella recipe – how to make Paella Castellana with chicken, ham, sausage and crabs for 4 persons.

Spanish Paella Ingredients:

  • 400 grams (about 1 pound) of rice for paella
  • 1kg (2 ponds) of boneless chicken meat cut into chunks
  • 100 grams (3 oz) of Spanish ham (jamón)
  • 1 sausage (chorizo)
  • 12 crabs
  • 200 grams (7 oz) of clams
  • 2 red pepper (from a tin can)
  • 1 cup of tomato sauce
  • 100 grams of tender peas
  • saffron, salt and pepper to taste
  • 4 cloves of garlic
  • 2 lemons
  • 1 onion
  • 2 spoons of fresh parsley, cut into small pieces
  • 1 and 1/2 liter of water, with a broth cube
  • 3/4 cup of olive oil

How to make Paella Castellana:

Clean chicken, take away bones and skin, cut it into chunks and lay it aside. Heat 1/4 cup of olive oil in a large frying pan and fry chopped onion for a while. Add pieces of sausage, ham and chicken and once the meat is half fried, pour in 3 cups of water (or broth). Continue cooking until chicken meat is tender.

Heat the rest of olive oil (1/2 cup) in another wide pan and fry cloves of garlic. Once garlic is a bit browned, add paella rice, cleaned crabs, clams (previously washed well), tomato sauce, peas and red pepper cut into strips. Cook altogether, continually moving for about 5 minutes. In continuation, add meat (chicken, ham and sausage) with about 1 liter of water (or broth). Add saffron, pepper and salt to taste.

Cook for 20 to 25 minutes, continually stirring with a wooden spoon in order to distribute well the ingredients. Paella is ready once water is absorbed and evaporated. Before serving, sprinkle with lemon juice to your taste and decorate paella with lemon wedges. Serve in the same paella pan where it was prepared.
