Traditional Spanish Recipe Paella

Recipe for traditional Spanish food – Paella from Alicante with chicken, anglerfish and shrimps for 6 persons.

Paella Alicantina Ingredients:

  • 1 and 1/4 kg of chicken meat (2 and 1/2 pound)
  • 300 grams (10 oz) of clean anglerfish (lophius)
  • 250 grams (8 - 9 oz) of sweet red pepper
  • 300 grams (10 oz) of grated tomato
  • 1/4 liter (1 cup) of olive oil
  • 750 grams (1 and 1/2 pound) of rice for paella
  • 1 nyora (Spanish red round pepper)
  • 1 bulb of garlic
  • 300 grams (10 oz) of red shrimps
  • 2 and 1/2 liter of water (10 cups)

Paella recipe:

Cut chicken into chunks and cook it together with chopped onion in water during 10 minutes. Take out the meat and put the broth aside for later use.

Prepare a paella pan, put olive oil and heat it. Fry nyora (Spanish red round pepper) for a while. Take it out into mortar and pestle with a bit of salt and mash it. In the continuation, fry red pepper (cut previously into 6 strips) and shrimps. Once ready, take them out and reserve for the garnish.

Thereafter, fry chicken meat and clean anglerfish together with minced garlic and grated tomato. Once the meat is tender, add paella rice and fry for a while. Finally, pour in water (in fact, previously prepared chicken broth), nyora, saffron and salt to taste. Place shrimps together with strips of red pepper on top of the paella. Cook for about 20 minutes more until water is absorbed and paella rice is ready.
